Baked Potatoes & Carrots

Ingredients:
​potatoes, carrots, butter, olive oil, salt, pepper, dried herbs or parsley, garlic powder or cloves
​
Preheat Oven to 400 degrees F 
Wash potatoes and carrots 
Slice everything up and place on baking sheet or pan
Drizzle some olive oil and add some butter (maybe garlic butter or oil) if you'd like
Season with salt, pepper, paprika, garlic power and parsley
Bake for 30-45 min

The Best French ​Crepe Recipe
Ingredients
​
  • 2 eggs
  • 1/4 cup butter, melted
  • 2 1/2ish tbsp sugar - for savory use less or no sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup milk 
  • 1/8 cup water
  • 1/2 tsp vanilla
  • dash of salt

Crushed walnuts, sugar + I added maple syrup
*Nutella, fresh fruit and bananas would have been my main choice, but this is what I had in the kitchen at the moment
These are really such good crepes you can eat them on their own without filling

Macedonian Salad

ingredients: tomatoes, cucumbers, olives, onions, parsley, feta, salt, oil, wine or apple cider vinegar
combine all ingredients in a bowl and serve. 


Really good with some bread on the side to dip in

Homemade Tabbouleh
ingredients:  quinoa, parsley, mint, tomatoes, lemon juice, onion, garlic, olive oil

How: cook quinoa like you would cook rice or however you'd like
•chop all ingredients (except quinoa ) and add together in a bowl
I never measure ingredients, just use your imagination!

Summer  Salad
​
ingredients: feta, sheep, or goat cheese. I used Feta.
​Romain lettuce, tomatoes, shredded carrots, celery, raisins, chia and hemp seeds

​How:  Chop it all up. Crumble cheese with your hand. Sprinkle chia and hemp seeds over. Dash of salt and pepper.Lemon Vinaigrette: squeeze half lemon over salad. Drizzle olive oil, and apple cider vinegar over. 
 
Be creative add nuts if you'd like, switch up the vinegar, do whatever you heart desires

Quinoa Taco Bowl
ingredients: quinoa, onion, garlic, avocados, tomatoes, sriracha seasoning, lemon, olive oil, salt (I used Himalayan salt) 
Cook quinoa however you'd like. Wash tomatoes, lemon, and avocados and remove avocado skin. Chop up onion, garlic, avocados, tomatoes, and combine. Hot sauce. 

Squeeze some lemon juice over and sprinkle some sriracha seasoning on top. You can use whichever pepper you'd like.
Enjoy as a salad and a taco! Feel free to play with this simple recipe by adding black beans and cilantro + lime.
For extra protein you can add tofu, lentils, chicken, chorizo or beef. Eat intuitively.

​Banana and Baby Spinach
work with what you have: blender, juicer, magic bullet, etc.
blend greens first then add as many bananas as you'd like
Sprinkle chia, hemp seeds, and bee pollen on top

​Benefits:
•Bee pollen is a complete food & has more protein than animal sources
•hemp seeds are rich in vitamin E, source of fatty acids like Omega 3 and 6. Aids in digestion and highly increases energy
•chia seeds high source of antioxidants, nutrients, fiber, and protein

Berry Bowl
Handful organic blueberry and raspberry mix, handful almonds, 1 Banana, ​Chia Seeds 
Red Mill 6 Grain Hot Cereal (you can used unseasoned quinoa, or oatmeal)
Blend banana, some almonds, a little water, and berries in magic bullet(or whatever you have)
Chop almonds
Mix together in a bowl with grain of choice and top off with almonds, berries, and chia seeds

Detox Green Juice
Cucumber, Celery, Dandelion, Spinach, Pineapple, Lemon
Start with green first then pineapple last
Blend, Juice, or use a Magic Bullet
Sprinkle hemp and, chia seeds on top and add a raspberry on top

Healthy Happy Snack
Daily Dose: you should have approximately 2 cups of fruit everyday
Blueberries and Raspberries are so good for you. 
They are full of antioxidants, vitamins, minerals, reduce cancer, promote a healthy heart, fight UTIs, and aid in anti-aging what more could you ask for
They will keep you young, healthy, happy, and alive.

Chia Hemp Pudding
ingredients: 1 cup yogurt or milk of choice, hemp seeds, chia seeds, teaspoon or less pure vanilla extract, teaspoon honey (or sweetener of choice)

Sprinkle everything over yogurt and mix 
You can add dark chocolate chips and some nuts or seeds for extra protein

Chia Hemp Pudding is full of nutrients, proteins, as well as Omegas. This is really good for a breakfast, wherever you're in a rush, or just too lazy to make anything else.

Purple Smoothie
I use this frozen blend of organic berries 
it has blue berries, raspberries, and some other type of red current berry.
Blend frozen or fresh berries, 1 banana, almonds, and add water
When you're done pour it in a glass or mason jar. Top off with chia, hemp, or bee pollen

Add whichever fruits you would like and improvise to whatever is in your fridge or home.
You can really use nuts you desire, and seeds which are both an great protein boost along with an energy boost.

Gallo Pinto with Salsa
This is my one of my favorite recipes and it's so good for you especially if you need extra calories throughout your day.
Ingredients: Salsa, 1 can black beans, rice(I used a wild rice mix), parsley, basil, cilantro, tomatoes, salt, red pepper, white onion, 2 cloves garlic
Heat up your skillet with some avocado oil, and add minced garlic. Cook up atleast 1 cup of rice with 2 cups water. Add Salt of course.
Wash and chop up all your greens of choice, 
In another pan ad onion, tomatoes, salsa, and black beans. Add a a generous amount of cumin(optional).
Let it cook for for 5 minutes. Mix in rice, sprinkle in greens, Add your favorite hot sauce, serve with warm tortillas or chips

Refreshing Ginger Salad
Ingredients: Organic baby spinach & kale, nuts of choice (I used walnuts and Brazil nuts), shrimp, cranberries, tomatoes, salt, pepper, chia and hemp seeds
 Ginger Dressing: Blend together half an onion, small ginger, lemon juice, a little water water, celery. Optional to buy organic Ginger Miso dressing from Whole Foods, which is also really good.
Add everything together in a big bowl and serve.
This is a super easy and nutritional dish for lunch or dinner. Its full of nutrients, proteins, a serving of fruit and veggies. Chia and hemp seeds will give you a boost of energy, while ginger helps you detox.
This is a really easy meal to convert into plant based by eliminating the shrimp and swapping for chickpeas which are a great source of plant protein.
